"My three favorite dirt roads in the mountains of San Diego are Viejas Grade outside of Alpine, Black Canyon near Ramona and Boulder Creek near Descanso. It's possible to link all three together in a single ride, but it makes for a very long day well over 100-miles and 10,000 feet of elevation gain. Here's a more manageable, yet still-demanding 67-mile route with 7500 foot climbing. There's food/water for purchase at Lake Cuyamaca (as well as porta potties in the nearby park) and in Descanso."
